Salute! It has been a great week so far as I got some spare time for myself to do some grocery shopping and to whip up something healthy and nutritious in the kitchen. As much as I love my job, I also enjoy working in the kitchen where I get to be creative with food. For today’s lunch, I did a egg Benedict’s with garden salad and dessert cheese on biscuit crackers.
If you’re a cheese-lover, you should really try this. This isn’t your normal savoury type of cheese. Instead, the cheese has a mild sweet taste and has the texture of cream cheese.The chunks of dried melon and mango has a little crunch which made the cheese really appetizing.
1.Boil the pot of water.2. Add 3 tablespoons of vinegar3. Stir and swirl the boiling water with a ladle to create a whirlpool effect.4. Crack the egg and slip it into the boiling water.5. Continue to stir for 2 minutes or so until the fluffy egg whites are cooked.
Buttered Wholemeal Toast
1. Spread a thin layer of olive spread on the toast.2. Add a slice of cheese.3. Top it off with some ham.4. Lay the poached egg gently over the top.
Egg Benedicts is usually served with Hollandaise sauce. But I used whatever sauces I have in the fridge- chilli sauce and thousand island.
This Soyashake was inspired by a local nutritionist, Bibi Chan, who taught the contestants at Sunsilk Academy Fantasia about eating healthily. She taught them, in particular, how to make healthy protein shakes. What was interesting about her recipe was that she used oats to increase the fibre content of the drink. She also mentioned that such protein shakes can be a form of a meal replacement. The idea of concocting my own version of protein shake sprang up. In this recipe, I use soyabean powder in place of protein powder. Soyabeans is a source of protein too!
