Dining at a Celebrity chef’s restaurant isn’t part of my daily affairs, so being invited to dine at one of the high-end restaurants at Marina Bay Sands had set my heart on fire. I have not heard about Adrift by David Myers restaurant but I’ve read restaurant reviews on this stunning restaurant. Thanks to Canon Singapore, I managed to make my maiden visit to this posh restaurant.

Adrift by David Myers

Adrift by David Myers is located on the first floor of Tower 2 at Marina Bay Sands. Upon entering the restaurant, you notice how classy the restaurant interior looked. It’s dark yet mysterious and very manly. It spoke of David Myer’s taste in style.

This restaurant features Californian-Asian-inspired dishes. Their menu includes small plates, healthy salads, seafood, and meats grilled over bincho (white) charcoal on a traditional robata grill. They also offer evening alcoholic drinks and cocktails.

Do you know that Adrift is also one of the green conscious restaurants in Singapore? They have adopted several green practices like minimizing food waste, getting herbs from Marina Bay Sand’s in-house herb garden and recycling cooking oil.

During the event, the removed the smaller dining tables and replaced them with bigger and longer tables. Even with the change of their dining setup, their modern and chic ambience of the restaurant is still retained.

As usual, we had our annual Lo Hei with the team from Canon Singapore before the luncheon. I was surprised that Adrift, too, had their version of Lo Hei. All the Lo Hei ingredients were nicely presented but taste-wise, it tasted nothing like the traditional Lo Hei we use to have. It was very appetizing at all but I’m not blaming them for their lacklustre take on this Singaporean Chinese Dish.

Crunch Time

As we were waiting for our dishes to be served, the kitchen staff were preparing our 3-course meal. There were plates of food everywhere – kitchen counter and even the bar-top counter where they were preparing the desserts.

Hokkaido Scallops

The thinly sliced Hokkaido scallops were mouthwateringly good. The scallops were topped with sea grapes and brown butter sauce which truly enhance the taste of the scallops. You just can’t go wrong with fresh Hokkaido scallops which harbour the sweetness of the ocean.

Binchotan Salmon and Chermoula

There are 3 main courses to choose from and I choose this salmon dish over the beef and chicken dishes. I was actually a tad disappointed with this main as the dish was served cold and the salmon tasted very raw. The sliced cucumber and other garnishes did not go well with the salmon at all.

Maybe they just could not handle this large-scale preparation of dishes?

Chocolate Sherry

It was a simple deconstructed chocolate dessert which has several textures going on. There’s cocoa crumble at the bottom, earl grey ice cream and raw honey. It was pleasant but I just wished that they had served the dish before the ice cream starts to melt in a puddle.

I may have gone there with high expectations. When my expectations were not met, it was difficult for me to leave this place with a positive impression. But nonetheless, I still believe in the restaurant’s potential after having read many online positive reviews. There are also a couple of food writers at my table who quipped how great the food there after they had gone there for tastings. Hopefully, the next time, I will be awestruck by their new culinary creations.
