Creamy Coconut Banana Oatmeal Porridge Recipe

I am pretty excited to share this Coconut banana oatmeal recipe with you guys because it is super simple, cheap and easy to make. My version of coconut banana oatmeal will differ from the other online recipes because I use an Asian method of preparing the bananas. And this step makes a world of difference! This version of creamy coconut banana oatmeal is complex in flavours due to the caramelisation of the bananas and sugar. You, your kids and your grandparents are going to love this. Because it is soft and easy to digest, even babies can stomach this too.

It’s healthy and makes a great breakfast or dessert after a meal. It’s vegan-friendly, super satisfying and wholesome. Oats are loaded with dietary fibre and it’s going to increase your bowel movement right after consuming this oatmeal porridge.

This coconut banana oatmeal only requires 4 basic ingredients.

The four basic ingredients for this recipe is banana, sugar, instant oats and coconut milk. If you have these ingredients in your kitchen cabinet or pantry, then you are good to go. But since I have some skim milk left in the fridge and a jar of cinnamon at home, I decided to add it into my oatmeal porridge to make it even creamier. But these ingredients are optional.

The Milk

Over here, I am also using coconut cream instead of coconut milk because I will be using it for another recipe. Since coconut cream has a very thick consistency, I diluted it with some skim milk. You can also add some water, coconut water or any plant-based milk to dilute it as well. Make sure you use unsweetened milk otherwise your oatmeal porridge will taste overly sweet.

The Sugar

I also use palm sugar because that is what I have in my pantry but regular white sugar will work just fine.

The Oats

I prefer to work with instant oats because it cooks quickly. You can definitely use rolled oats but that will take a longer cooking time.

The Banana

It will be best for you to use a very ripe banana which has some brown spots on it because such ripe bananas taste super sweet and has a stronger banana flavour.

The Recipe

To be honest, I kind of eyeball the amount of ingredients to put into the pan. But if you had no idea how much ingredients to put, here’s a rough guide.

Serving: 1, Preparation time: 5 minutes

Tools: Pan or pot

Ingredients:

1 medium-sized banana

1 tablespoons of sugar

200ml of coconut milk ( or 2 tablespoons of coconut milk, 150ml of water/milk)

3 to 4 tablespoons of instant oatmeal

A pinch of cinnamon (optional)

A pinch of salt (optional)

Step 1: Slice the banana into coins and pan-fry them.

You can pan-fry the bananas with a little bit of olive oil to prevent them from sticking onto the pan. If you are using a non-stick pan, you can skip the oil. Pan-fry the bananas till it becomes mashy and gluey. This step will caramelise the sugars in the bananas to give it that toasty butterlike-scotch taste.

Step 2: Toss in the sugar to caramelise it.

Next, you would want to caramelise the sugar with the banana and ensure that it coats the banana. What you are after is more of that caramelised toasty taste that these pan-fried bananas will add to the oatmeal porridge.

Step 3: Pour in the coconut milk and let the caramelised banana cook through.

Pour in the rest of the milk and continue to stir the mixture.

Step 4: Add in the instant oats and let it cook in the mixture.

It only takes less than 20 seconds for the instant oats to cook through so you can gradually turn off your gas stove and leave it to cool.

At this point, you can add a pinch of cinnamon and salt to enhance the flavour of the oatmeal porridge. I always find that adding a little salt to a sweet dish will really help to balance out the flavours. Salt also mellows down the sweetness of the dish.

Step 5: Serve and top it with a dash of coconut milk

You can add some crunch to the oatmeal porridge by adding some crushed walnuts. Over here, I finish off the dish with a dash of coconut cream.

This is by far the best oatmeal recipe I’ve tried. It’s healthy, wholesome and easy to whip up in minutes. Each serving probably costs less than $0.50. The most expensive ingredient used here is probably the banana itself.

I love the creamy taste of the coconut cream that complements so well with the soft caramelised banana. It’s pretty mind-blowing and still crave for this sweet oatmeal porridge in the morning.
