A leading Green Restaurant in Singapore
Winestone, a modern-European restaurant in Singapore, has recently secured the Singapore Environment Council’s (SEC) Eco F&B certification. This certification was awarded in recognition of the restaurant’s efforts in sustainability. It scored over 70% on environmental performance in its management of energy, water and waste practices evidenced by strong leadership support through rewarding staff who participate and take action to go green.
At Winestone, they also use locally sourced fish and vegetable produce. To minimise food loss, fresh produce reaching use-by dates and offcuts are re-directed to the production of hearty vegetable stock. It is heartening to know that restaurants are championing such eco-friendly initiatives to promote sustainability.
Winestone supports local
This Christmas, Winestone has also curated unique festive meals and offerings together with 4 local makers. They worked with a local Mixologist, Dannon Har, to create a series of festive cocktails.
They have also partnered with Leon Hay, the family and owner of Singapore’s only goat farm, to offer diners freshly made cheese from locally harvested goat’s milk. Below is their goat’s cheese salad.
June Chen, co-founder and lead designer at Floral Mikelle, has also worked with them to offer sustainable floral wine hampers for gifting this season.
Lastly, we have Jas Rehan, founder of A Poet’s Terroir, is a wine writer, poet and artist, collaborated with Winestone to conduct a sensory masterclass where you get to enjoy a 3-course meal, taste wines and paint.
Winestone 4-course Festive Meal
A couple of days ago, we were also at Winestone to try out their 4-course festive meal featuring their new creations like pepper tuna salad, seafood bisque MS2 ribeye, fresh sea perch and more. This festive meal is available from 15 November to 30 December 2021. It costs SGD 88++ per pax. Each diner will be served either a glass of Hunter Valley Shiraz or Riesling wine by Heritage Road.
We were invited to their media tasting so we get to try all of their offerings on the menu but in portions meant for 2 people.
On Thanksgiving Day, they will be organizing a similar 4-course dinner with all profits going to APSN, a social service agency that provides special education and job opportunities for individuals in our community with mild intellectual disabilities. The meal includes a surprise thanksgiving dessert prepared by APSN and Winestone.
Festive Cocktails by Chief Mixologist of Section D, Dannon Har
We tried the Santa’s mudslide (on the left) which comprises cognac, coffee liquor, Bailey’s Irish Cream, heavy cream and chocolate shavings. I personally enjoy the Warm Hugs, a warm ‘Christmassy’ drink, which is a concoction of dark rum, spiced syrup, butter and cinnamon.
Pepper Tuna Salad & Chilito Salad
It’s a refreshing appetizer to kick start the festive meal. The salad was fresh and we love it.
The seafood bisque was amazing. It’s like drinking a really thick and flavourful prawn soup. There’s a lovely chunk of lobster in each bowl of soup.
Grain Fed Rosedale Ruby Pure Australian MS 2 Ribeye, Free Range Organic Chicken & Locally Farmed Fresh Sea Perch
During your festive meal, you will only get to pick one main course. Since it was a tasting menu for us, we got to try all three and I would personally recommend their Free Range Organic Chicken because the meat is so sweet and tender.
Mille Feuille, Apple Croustillant and Molten Chocolate Log Cake
For desserts, we also get to taste all three of the desserts made available in the festive 4-course menu. I personally enjoyed the Apple Croustillant and Molten Chocolate log cake very much.
