Bulgogi Syo, known for their Flambé hot grilled dishes, has recently collaborated with renowned celebrity chef Choi Hyun-seok from Netflix’s Culinary Class Wars. So if you are a huge fan of that show, it is worth checking out this new special menu at Bulgogi Syo.

Bulgogi Syo x Chef Choi’s Special New Menu: Memories on a Plate

Chef Choi brings these inspirations to life through Bulgogi Syo’s signature hotstone grilling, presenting an exciting new menu that bridges tradition and innovation, showcasing the best of Korean flavours. Titled “Memories on a Plate”, the collaboration introduces four exclusive dishes inspired by Chef Choi’s culinary journey. Each meal set starts from just $21.90++.

If you watch Culinary Class wars, you will remember this dish as the one that Chef Choi forgot to put garlic in! It reimagines the traditional Korean hand-torn noodle with a special twist with a delicate briny note from the squid ink. The squid ink taste was not strong and it tasted similar to what Ban Mian eaters would know as Mee Hoon Kuay.

Its served in a rich clam broth infused with butter, garlic, and aromatics, which was really flavourful. The dish also comes with fresh kimchi salad and stir-fired korean fish cake which rounded up the meal quite well.

Jang Trio with Omugi Beef Tenderloin ($39.90)

The common three staple sauces used in Korean cuisine are ganjang (soy sauce), doenjang (soybean paste), and gochujang (chili paste). Chef Choi’s Jang Trio spotlights these staples with premium Australian Omugi beef, seared on Bulgogi Syo’s specialty hot stone with aged doenjang butter for deep umami. Ganjang-pickled radish with truffle adds freshness, while house-made gochujang brings it all together. The meat was tender, though I wished it carried a bit more flavour. It was still delicious and worth trying.

Fresh Omugi Beef Yukhoe Sotbap – $25.90 ⭐ Favourite

A beloved delicacy in Korea, Yukhoe (fresh seasoned raw beef) is elevated by Chef Choi with premium Australian red barley–fed Omugi beef with spring onions, delicately seasoned to showcase the fresh beef’s bouncy texture and clean flavour.

This set is served with fluffy iron pot rice, veggies, soup, and stir-fried fish cake. It does look pretty raw, so it might not be for everyone, but the beef is super clean-tasting without that usual gamey flavour. If you’re not a fan of raw textures, you can always ask them to torch it more or just mix it into the hot rice, which cooks it slightly as you stir. The best part? Ending the meal like a true local by pouring tea into the pot and scraping up the golden, crispy rice at the bottom.

Maeum Dwaeji Galbijjim With Triple-Cheese Risotto – $25.90 ⭐ Favourite

Inspired by the soul-warming stews of his Korean heritage, Chef Choi presents mokjeonji, or US pork shoulder marinated in his signature spicy sauce, slow-simmered with gochugaru and aromatics. The pork shoulder was so tender and literally melts in your mouth. It’s paired with a three-cheese risotto featuring Mascarpone, 12-month aged Parmigiano-Reggiano, and Mozzarella torched to perfection. The cheese was the real star for me, a thin, golden layer that was easy to eat, not jelat at all, with an insane cheese pull that made every bite extra satisfying.

Our Verdict
Chef Choi’s collab menu is bold, fun, while still keeping the staples of traditional Korean cuisine and honestly, everything just tastes better on a sizzling hotplate. The portions are generous and perfect for sharing, making it great for groups. I’ll definitely be coming back for the Maeum Dwaeji Galbijjim With Triple-Cheese Risotto and the Yukhoe Sotbap, which stood out the most for me.
