I have always been intrigued by how raw foodist had so creatively transform raw foods into everyday delicacies from icecream, pizzas to sushi. Amazing isn’t it? Seriously, raw foodists aren’t missing out much on anything except warm food. One particular raw food dish that intrigued me the most is raw food pasta using zucchini noodles. Yes! They use zucchini to make noodles which will be marinated in fresh tomato sauce. Yums. I wouldn’t think it would taste as good as pasta until I’ve tried it myself. You know, it is really not too bad because zucchini has a similar texture to spaghetti and when it is coated with fresh pasta sauce, who can really tell the difference right?
Others may use a spiralizer to make zucchini noodles but I used a Julienne peeler to create long thin strips that resembles noodles. I would invest in a spiralizer if I am serious about making zucchini noodles every other day but as for not, I am happy with my Julienne peeler even though it may take me a longer time to prepare the ‘zoodles’ as compared when using the spiralizer.
To prepare the peanut sauce, I mix chopped green onions, 1/2 teaspoon of liquid amino, nutritional yeast, cayenne pepper, black pepper and lemon juice. You may notice that I always add both cayenne pepper and black pepper together in my dishes because I like that extra spicy kick.
Anything taste good with peanut butter and I don’t know why but it just is.
Drizzle the peanut sauce over and chomp down.
It’s taste like salad in peanut sauce except you’ve got noodles dangling from you mouth.
