Durian Oatmeal Parfait with Frozen Raspberry Bits and Walnuts Recipe

The king of fruits is often dubbed as a stinky fruit but to durian lovers, like myself, is the most fragrant fruit on earth. It has a strong unique scent that cause people to run a mile from but once you got pass its scent, you are going to love this sweet creamy and fleshy fruit. Like avocados and bananas, durians are great for making creamy ice cream.

Durian Oatmeal Parfait with Frozen Raspberry Bits and Walnuts Recipe
Frozen durians flesh ( with seeds removed)
Chopped walnuts
Frozen Raspberries
Baby Oatmeal
I add about 2 tablespoons of baby oatmeal to the glass cup and filled it with water till the oatmeal is fully covered with water. Baby oats gets soften really fast in water so you don’t really have to cook it or add hot water. Let the soaks soak in water while you prepare the durian parfait. 
Take out the frozen durian flesh and thaw it for a minute or so than place it in a powerful blender or food processor. Pulse or blend it till you achieve a creamy consistency. Scoop up the durian ice cream and topped it over the oats. Then crush the frozen raspberries into tiny bits and sprinkle over the durian ice cream as toppings. Add some chopped walnuts for some nutty flavor and a crunch!
